What is the job?
As a Senior Sous Chef, your leadership, passion for culinary presentation, and commitment to exceptional flavor will be key to elevating every guest’s dining experience. By taking ownership of the kitchen environment, maintaining the highest standards, and applying your expertise to refine our menu, you’ll help create lasting memories that keep our guests coming back.
Daily tasks and responsibilities
- Supervise and coordinate kitchen operations to ensure timely, high-quality food production.
- Ensure all food is prepared and presented in line with hotel brand standards.
- Maintain excellence in culinary quality, hygiene, and consistency across all outlets including restaurant, bar, lounge, and banquets.
- Monitor and enforce compliance with food safety, hygiene, and HACCP guidelines.
- Collaborate with the front-of-house team to ensure smooth and efficient service delivery.
- Manage inventory, food cost, and waste control to meet budget targets.
- Support menu development and contribute creative ideas for seasonal offerings and specialevents.
- Handle administrative tasks including staff scheduling, performance tracking, and kitchen logs.
- Address guest feedback related to food quality and take corrective actions to continuously improve.
- Maintain a safe and organized kitchen environment at all times.
- Lead, train, and motivate kitchen team members to deliver top performance and uphold professional standards.
- Should be updated with current market trends in food and beverage and have an approach to having great experiences for guest dining.
- Should be aware of the competition and industry knowledge of new techniques and other know-how.
- Liaisons with the purchasing department to ensure all the items used in the kitchen are of the best quality and always opt to bring new ingredients or better-quality produce.
- Should be aware of the pulse of his team members and ensure their growth and professional wellbeing.
- Ensures the personal hygiene of colleague is up to standard.
- Ensures that the daily logbook is utilized, and complaints are immediately reported to the Chef de Cuisine/Culinary Director.
- You will adhere to the Hotel’s Hygiene and HACCP standards and ensure its Standard Operating Procedures and Requirements are fully met.
- Ensures that all points mentioned in the logbook have been carried out i.e. mise-en-place and other instructions to complete the operation.
- Maintains record and follow up documentation, checklists for control purposes.
- Ensures all the Dubai municipality and HACCP regulations are followed, and documentation is up to date as per requirement, readiness for all hygiene audit at any given point of time.
General Tasks & Miscellaneous
- All colleagues must assess situations and react accordingly through analysis and perspective.
- All colleagues must be flexible and able to carry out any other reasonable duties and responsibilities within the scope of their job, including redeployment to alternative departments/areas if required, to meet business demands and guest service needs.
- All colleagues should be visible and available to both guests and colleagues, in accordance with their position, and serve as an example for others.
- All colleagues are required to comply with any reasonable request from their supervisor(s) within a reasonable timeframe, under normal circumstances.
Human Resources & Training
